Saimon's mac 'n' cheese

Mac ‘n’ cheese is a famous American pasta dish. It consisting of cooked macaroni pasta and cheese, can also add with other ingredients, like bread crumbs, Worcestershire sauce and white sauce.
Traditional mac ‘n’ cheese is a casserole baked in the oven. Anyway, it can be done in a sauce pan on the top of the stove as well.

Ingredients

  • 500 g dried macaroni
  • sea salt
  • 50 g butter
  • 1 large onion– diced
  • 2 slice bacon- diced
  • 2 large mushroom– sliced
  • 50 g butter
  • 3 tablespoons plain flour
  • 10 cloves garlic- peeled and finely sliced
  • 1 bay leaves
  • 1 litre milk
  • 1 large tomatoes – diced
  • 150 g Cheddar cheese – grated
  • 50 g Parmesan cheese – grated
  • thyme
  • nutmeg
  • freshly ground black pepper

Method

  1. Boil the pasta in large pot of salted water until al-dente. Drain.
  2. Melt the butter, sweat the onion, brown the the bacon, soften the mushroom and set a side.
  3. Melt the butter at medium heat, stir in the flour to make a roux.
  4. Add in sliced garlic, stir and cook until golden and sticky.
  5. Add the bay leaves and whisk in the milk slowly a little at a time until you get a nice smooth sauce. Bring the mixture to boil, lower the heat to simmer and keep stirring.
  6. Add in cooked onion, bacon, mushroom, diced tomato, pasta, thyme, nutmeg in the mixture. Stir in grated cheddar and Parmesan cheese.
  7. Season with salt and pepper to serve.
