Beef Ball Noodle Soup -Mee Sapi recipe

Malaysia style beef noodle soup which called Mee Sapi are one of my favorite beef noodle instead of Taiwanese Beef noodle. One day, i really miss this beef noodle then i try to cook by my self with Malay beef bone soup (Sup Tulang) as soup base. I use ramen noodle instead of egg noodle which commonly used for Mee Sapi.

Ingredients for Malay Beef Bone Soup (Sup Tulang)

  • 3 inch Cinnamon Stick
  • 1 Tbsp Star Anise
  • 1/2 tsp Cloves
  • 1/2 tsp Cardamon
  • 1 Tbsp Black Pepper Cone & Coriander (pack with muslim clothe)
  • 1 Kg beef bone
  • 2L water
  • 2 Tbsp cooking oil
  • 1/2 inch ginger
  • 5 clove shallots
  • 3 clove garlic

Method

  1. Boil beef bone with 2L water until tender and simmer.
  2. Heat the oil. Crush the ginger, shallot & garlic. Saute together with spices until fragrant.
  3. Deglaze with 1 cup of stock and add all of the ingredients to the pot of stock and bone. Boil & simmer 1/2 hour.

Ingredients for Beef Ball

  • 400g beef mince
  • 1 inch ginger (fine diced)
  • 2 Tbsp Sweet Soy Sauce
  • Pinch of Salt & pepper

Method

  1. Mix all the ingredients.
  2. Roll to ball and add in boiling beef bone soup. Boil and simmer until tender.
  3. Salt & pepper to taste.

Ingredients for Beef Noodle

  • 200g Ramen noodle
  • 1 tsp Fried Sallot
  • 1/2 cup Bean sprout

Method

  1. Boil large pot of water with pinch of salt.
  2. Add in noodle and cook 3 minutes or until al-dente.
  3. Rinse with cold water. Put in bowl.
  4. Blanch the bean sprout. Top on noodle. Add in beef bone soup and beef balls. Garnish with fried shallots and serve.

How to cook rice?

Rice become the most widely consumed staple food for a large part of the world’s human population, especially in Asia. Rice can be cook easily with rice cooker nowadays, but how if without rice cooker? Here i will share some of cooking method for rice without rice cooker.

Equipment

  • Saucepan with lid
  • Stove

Absorption Method

  1. Place 1 cup (200g) of rice in a saucepan.
  2. Add 1 1/2 cups (375ml) of cold water. Bring to boil. Stir occasionally.
  3. Reduce heat and simmer covered for 12-14 minutes.
  4. Remove from heat and stand covered for 5 minutes.

Rapid-boil Method

  1. Place 1 cup (200g) of rice into saucepan
  2. Add 6-8 cups of cold water. Bring to boil. Stir occasionally.
  3. Reduce heat and boil rapidly, uncovered for 12-14 minutes.
  4. Drain well and serve.

Sushi Method

  1. Rinse 1 cup (200g) of rice under cold water, drain and place into saucepan.
  2. Add 1 1/2 cups (375ml) of cold water and bring to boil, reduce heat, cover and simmer for 12 minutes.
  3. Remove from heat, stand covered for 10 minutes.
  4. Place rice into a non-metalic bowl, evenly mix in 3-4 tbsp of Sushi Vinegar using a wooden spoon.
  5. Cool rice quickly by fanning, prior to making your favourite Sushi dish.
